Ingredients

• 4 white fish fillets (cod, halibut, or sea bass) • 1 ½ cups cherry tomatoes, halved • ½ cup Kalamata or green olives, pitted and sliced • 1 small red onion, thinly sliced • 3 garlic cloves, minced • 2 tbsp extra virgin olive oil • 1 tbsp fresh lemon juice • 1 tsp dried oregano • ½ tsp red pepper flakes (optional) • Salt and black pepper to taste • Fresh parsley or basil, for garnish • Lemon wedges, for serving

Instructions

Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil. Prepare the fish: Pat the fillets dry with a paper towel and season with salt, pepper, and lemon juice. Make the topping: In a bowl, mix cherry tomatoes, olives, red onion, minced garlic, olive oil, oregano, and red pepper flakes. Toss well. Assemble: Place fish fillets in the baking dish. Spoon the tomato-olive mixture over the fish evenly. Bake for 15-18 minutes, or until the fish is flaky and cooked through. Garnish with fresh parsley or basil and serve with lemon wedges. Enjoy!
